Apricot Salad

I love apricots.

When I was a child I knew it was a good day when I opened my lunch box and school and saw dried apricots. They're such a tasty snack! My friends would often try to trade things from their lunch box for a taste of my dried apricots but I wasn't about to share my favourite lunch box treat! I've been hunting around trying to make a big list of different salads to try. Coming into summer means you can get away with endless salads for dinner. If you're careful with the dressing, you can have a guilt-free meal! I always try to make my own salad dressing which so far has turned out great. They're tastier and better for you.

We had some friends over for dinner and I wanted to do an apricot themed meal, starting with this salad. The apricot flavour really comes out in the dressing and while I used dried apricots for the salad, you could use real ones as well. It was just unfortunate that the supermarket I went to wasn't stocking apricots at the time. The apricot mixed with the honey creates this silky sugary flavour and with balsamic vinegar thrown into it, you really can't go wrong. Balsamic vinegar is the key to just about any salad dressing.

Apricot Salad

Ingredients

1 bunch of cos lettuce
1 cup of dried apricots, chopped
1 red onion, thinly sliced
200g of feta
Punnet of cherry tomatoes

Dressing:
2 tbsp balsamic vinegar
3 tbsp of honey
3 tbsp of apricot juice (nectar from a can)
Dash of olive oil
1 shallot, thinly diced

Method

Wash lettuce and chop cherry tomatoes in half.

Place lettuce, onion and tomatoes in a bowl and crumble the feta into the salad.

Sprinkle apricots and toss to combine.

To make the dressing:

Add all ingredients to a bowl/jar and stir/shake to combine.

Drizzle over the salad or serve on the side.
