Avocado salsa

I hope you have all had a wonderful start to 2015. As for me I was fortunate enough to have some friends over to spend a few days up at our beach house. We spend the last day of 2014 playing Articulate (SUCH a great board game if you have a large group of people!), celebrating my dad's birthday and playing Just Dance via the Xbox Kinect. The days that followed have been spent lounging in the sun, playing frisbee at the beach and eating. Here's a couple of pictures of our day.


I made this avocado salsa recently as being Summer down under means they're super cheap. If you're lucky you can get them 50c at your local fruit and veggie stall. Avocados are a staple Mexican ingredient. If i'm not eating it in my burrito, I'm having guacamole on the side. If I'm not having guacamole on the side, I'm having an avocado salsa.

On my recent trip to Melbourne my mum bought these beautiful handmade bowls. I've told her to use them for serving curry but they also look great with any sauce or dip in them. This dip goes great with some nacho chips and is an easy appetiser or party food.


Avocado salsa


1 400ml can of corn kernels
1 small red onion, finely diced
2 avocados, diced
Handful of fresh coriander
2 spring onions, finely sliced
1 lime, squeezed
Pinch of cayenne pepper


Combine everything together in a bowl gently.

Serve with corn chips or with your favourite Mexican dish.
