Bacon and Chicken Carbonara Tortellini

As you all know, Christmas is just around the corner. With most food bloggers posting Christmas cakes and wintery meals, living in New Zealand means that we have the privilege of enjoying Summer over Christmas time. This probably sounds like the most preposterous thing to anyone living in the Northern Hemisphere but let me give you a short list of why Summer at Christmas time is awesome:

  • you get to enjoy Christmas in your Summer break
  • forget the roast chicken, have a kiwi BBQ
  • you get to spend Christmas day playing with your toys outside
  • summer cocktails
  • hanging out at the beach
  • camping

Most of all you get to enjoy the sun! Yes our Christmas cards still have santa in a warm suit coming down a chimney but we are so used to that we don't think twice about it. So, instead of posting Christmasy meals, here's a pasta that can be enjoyed both in Summer and Winter time - wherever you are in the world!

This pasta has both bacon and chicken in it but you could easily substitute one for the other. Or, go ahead and make the whole thing vegetarian! There's enough mushrooms in the dish to make it filling without the meat. I used my home-made carbonara sauce as it's so much tastier than anything store bought. You can find the simple recipe for it right here. As always, pasta is best served with a side of bread - whether that be garlic, sour dough or ciabatta bread.

Bacon and Chicken Carbonara Tortellini

Ingredients

400g of fresh tortellini
500g streaky bacon
500g chicken breast
2 tbsp of crushed garlic
A few handfuls of brown button mushrooms
400ml of carbonara sauce
2 tbsp olive oil
Parmesan cheese for shaving

Method

Begin by slicing the chicken into bite sized pieces and dicing the bacon into small squares. Pour olive oil into a frying pan and sizzle the chicken and garlic for 5 minutes. Add bacon and let simmer.

Roughly chop the mushrooms and add to the bacon and chicken. In the mean time bring pasta to the boil and cook to el dente (about 7 minutes).

Once the pasta is done, drain and put back in the pot over low heat. Add chicken, bacon and mushroom mix, basil and carbonara sauce. Stir to combine and heat for 5 minutes or until sauce begins to pop.

Serve with some fresh basil and garlic bread.
