Bacon and prune bites

I've never been the biggest fan of bacon. We didn't have much of it in the house as a kid so I've never really understood the whole 'crazy for bacon' thing. Lately I've started to use it more and more in my cooking and am really enjoying the flavours it brings! I don't think i'm in love with it enough to eat it on it's own, but accompanied with the right things it can bring a new dimension to the meal.

These bacon and prune bites are so simple to make and only use two ingredients! They're great to have as tapas and if you're not a prune fan I encourage you to try one. Sizzled in the oven allows the juice from the prunes to ooze into the bacon and it becomes a delicious sweet and salty combo. Have you had these before? Bacon and prune bites


7 rashers of streaky bacon
20 pitted prunes


Preheat oven to 200 degrees.

Get a tray ready with some baking paper to keep it clean and easy to clean up.

Fill a bowl with water and sink 20 toothpicks for about 5 minutes. This will stop them from burning in the oven.

Lay your bacon out and cut each strip into thirds.

Wash prunes and place each to one side of a back strip. Roll until fully wrapped in bacon. Secure with a toothpick.

Bake in oven for 10 minutes or until sizzling.
