Deep Fried Gherkin and Chicken Burgers

I love making burgers. Last week I decided I wanted to try something new and different than the plain ol' cheeseburger. I usually stick to my beef patties or if I'm feeling adventurous, this pumpkin and halloumi burger. Today I wanted to test the waters with this delicious deep fried gherkin recipe I found online on one of my favourite food blogs.

The great thing about this recipe is that you don't need to own a deep fryer! You can make your own version of it at home with just a pot and some oil. Be warned that it can get very hot and splutter so you want to keep your distance. The mess is worth it though as you end up with deliciously golden crispy pickled gherkins. Yum. I served mine with this coleslaw and some shredded chicken from the local deli.

Deep Fried Gherkin and Chicken Burgers


1/4 cup plain flour
2 tbsp cornmeal
1/2 tsp cayenne pepper
1/2 cup of buttermilk (alternative is 1/2 normal milk with some lemon juice. Let it sit for 15 mins before using)
Large jar of pickled gherkins
Vegetable oil, for frying
8 burger buns
3 cups of shredded chicken
2 cups of coleslaw


Whisk together flour, cornmeal and cayenne pepper in a bowl. Slowly stir in the buttermilk until you get a thick consistency.

Drain gherkin onto a tray of paper towels and pat dry.

In a saucepan fill with oil until about 2-4cm deep and heat until bubbling. One at a time, use tongs to dip the gherkin into the bowl of batter and then gently drop into the oil. Fry for 3-5 minutes or until golden, flipping regularly. Drain on a paper towel. Repeat for all gherkins.

To assemble the burgers, lay coleslaw, chicken and a few gherkins on a bun.

Serve with a side of fries.
