Melon and Prosciutto Salad with Chicken Kebabs

Family meal time is rare in my house. Not because we don't want to sit down together (we do whenever we can!), but because we're not often all together for dinner anymore. With my brother studying down in the South Island and me being the busy bee I am, it's not often that we all get to sit around the table from each other and enjoy a meal. These photos are from a family meal we had around Christmas time when my brother was up visiting for the Summer. I decided to make my favourite salad, this Melon and Prosciutto Salad. Along with that I added some toasted ciabatta bread and cherry tomatoes soaked in balsamic vinegar.


I also topped the meal with some toasted pine nuts (one of my favourite things these days) and feta cheese. Honestly I have a constant supply of feta cheese in my fridge and I recommend you do too. It is great in pastas and on salads, and can even be served on it's own with a cheese board (it's also amazing on pizza). The chicken kebabs were just a few chicken breasts marinated in soy sauce, garlic and honey, then fried on the BBQ till perfection.
