Quinoa and pumpkin salad

One of our dear friends had her birthday recently. As she is vegan, to her surprise we all brought a vegan plate to share as a surprise pot luck. Owen and I put together this quinoa and pumpkin salad which was quite a big hit! I view quinoa as the 'health food of 2013'. Last year everyone was talking about this mysterious grain and the benefits it has for your body. It is quite a bland grain. I wouldn't recommend cooking yourself some quinoa and eating it on your own as I don't think it would taste very nice. When partnered with the right flavours however it can be quite a treat.

What do you think the trendy food of 2014 has been? I vote kale!

Quinoa and pumpkin salad

Ingredients

500g pumpkin
2 cups of red quinoa
1 bunch of kale, roughly chopped
1 shallot, finely diced
2 cups of water
Salt and pepper

Method

Preheat oven to 200 degrees.

Peel and dice pumpkin into small cubes. Place in an oven dish and rub with olive oil. Roast in the oven for 25 minutes or until pumpkin is soft.

Bring a pan to medium heat and add quinoa and water. Stir occasionally until water is absorbed and quinoa is plump. Add shallots and kale and stir to combine.

Add cooked pumpkin to quinoa and mix well until all ingredients are evenly combine. Add salt and pepper to taste. Transfer to a salad bowl and cool in the fridge or let rest on the bench to room temperature.
