It's Monday, which means that for most it's time to go back to work after enjoying two weeks of Summer, Christmas and New years. Lucky for me, I have Monday's off but I assure you i've been doing anything but enjoying the Summer sun the last couple of days. Owen and I have moved out of our apartment meaning that the last few days have been spent packing, moving and unpacking. Along with that I've gone through a few boxes of my old things lying in the garage and tried to shed some weight off it. Who knew that throwing out three years worth of university material would feel so freeing?!

Those of you that have had to go back to work however, don't fret. You can still enjoy Summer with it's long nights and warm breeze. If you need to kick your feet up after the first week back and enjoy a drink, this Watermelon Cocktail is sure to relax your bones. I over estimated a lot when making this and bought a whole watermelon. However I discovered that watermelons are actually rather large and you can get a lot of fruit out of just half of one! Of course it depends how many drinks your making, but half a watermelon was more than enough for four of us.

Watermelon Cocktail

Ingredients

1/2 cup sugar
Half a watermelon (about 4 cups)
3 1/2 cups of water
1/2 cup of lemon juice
Malibu

Method

Bring 1/2 cup of water and sugar to the boil in a small saucepan. Stir until sugar is dissolved.

Place watermelon in a blender and blend until crushed (like a slushie!).

Add 3 cups of water and lemon juice to the sugar syrup. Stir.

Fill glasses with ice and 1 shot of Malibu. Add 2 shots of watermelon and 1 shot of lemonade water. Stir gently and garnish with fruit on top.
